What’s the difference between sparkling tea and kombucha?

The Kombucha Brewing Process

1. Tea Extraction

First, suitable tea leaves for fermentación need to be selected, such as black tea, green tea, or oolong tea.  After hot water extraction, tea leaves release polyphenols, aromatic substances, and flavor components into the tea liquid.

2. Blending

Because yeast requires sugar for metabolism, a certain proportion of sugar needs to be added to the tea liquid. Sugar not only affects the fermentation speed but also the acidity and flavor of the final product.

3. Fermentation

After cooling, SCOBY starter cultures are added to the tea liquid, and fermentation takes place at a suitable temperature.

During fermentation: Yeast produces alcohol and carbon dioxide; acetic acid bacteria produce organic acids;

the microorganisms work together to create the unique flavor of kombucha.

4. Flavoring and Secondary Processing

After the basic kombucha fermentation is complete, fruit juices, plant extracts, or natural flavorings can be added according to market demand to develop different flavored products. The product then undergoes filtration, cooling, and carbonation to improve its taste.

5. Bottling

The final product is packaged using aseptic filling equipment to extend shelf life and maintain product quality.

What is Sparkling Tea?

Sparkling tea is a rapidly emerging type of tea beverage in recent years. It combines traditional tea processing techniques with modern beverage technology, using artificially added carbon dioxide to create a delicate bubbly experience similar to champagne or sparkling wine. Unlike kombucha, sparkling tea typically does not undergo microbial fermentation, does not use scoby, and does not develop a pronounced sour or fermented flavor. Its core concept is to preserve the natural aroma of tea while providing a sophisticated bubbly experience.

The Brewing Process of Sparkling Tea

The production process of sparkling tea is closer to modern tea beverage production than traditional fermented beverages. Its focus is on tea flavor extraction, clarification and filtration, and controlled carbonation.

1. Tea Extraction

First, carefully selected tea leaves are added to the extraction system. By controlling the water temperature and time, the aroma compounds, polyphenols, and flavor components in the tea leaves are fully released.

2. Filtration and Clarification

After the tea liquid is extracted, it needs to be filtered to remove tea residue and suspended solids, improving the product’s transparency and stability.

3. Blending

Depending on the product positioning, natural fruit juices, plant extracts, or sweeteners can be added to adjust the flavor of the tea liquid. Before carbonation, the oxygen content in the tea liquid needs to be reduced, and it needs to be cooled to a temperature suitable for carbon dioxide absorption. Carbon dioxide dissolves better at lower temperatures, resulting in finer and more persistent bubbles.

5. Carbonation

Through carbonation equipment, food-grade carbon dioxide is injected into the tea liquid, giving the beverage: a refreshing and stimulating sensation; fine bubbles; and a drinking experience similar to sparkling wine.

6. Bottling

The carbonated sparkling tea needs to be packaged using pressure-resistant filling equipment to ensure bubble stability.
