Planning a Kombucha Production Line: Key Considerations

Large‑Scale Commercial Brewing vs. Home‑Brewing

Although kombucha originates from home‑based artisanal brewing, scaling production from several liters per day to thousands of liters per day brings fundamental changes to brewing logic. This is far more than simply upsizing brewing equipment; it requires a complete re‑engineering of the kombucha production process.

  Home–Brewing Large–Scale Commercial Brewing
Equipment Glass jars, ceramic jars Tea brewing tanks, open fermenters, pressure-rated closed fermenters, chilled water tanks, refrigeration units, hot water tanks, membrane filtration systems, flash pasteurizers, filling lines, control systems, CIP cleaning systems
Temperature Control Natural ambient temperature fluctuation Refrigerated temperature-control system for precise fermentation temperature regulation
Sanitation Assurance Manual cleaning CIP system, semi-automatic / fully automatic process control
Batch Consistency Significant batch-to-batch variation Parametric process control for consistent output across batches
Quality Control Empirical judgment by operators On-line monitoring of pH, alcohol and other key parameters
Production Capacity Several liters to tens of liters Hundreds to thousands of liters per batch

Kombucha Production Line-tiantai

Core Equipment for a Commercial–Grade Kombucha Production Line

For a professional kombucha production line, brewing processes are engineered into equipment design. Equipment can be categorized by function into the following systems:

(1) Water Treatment System

Brewing water directly impacts final product quality and microbial stability. A RO (Reverse Osmosis) water treatment unit shall be equipped for consistent water purity and quality.

(2) Pre–Treatment System

Tea Brewing / Extraction Tank: Heated by electricity or steam for hot-infusion of tea leaves.

Mixing & Blending Tank (with agitator): Dissolve sugar and optional flavor additives into tea broth for homogeneous mixing. Equipped with agitators to ensure uniform distribution of sugar and flavor compounds.

All wetted parts adopt food-grade stainless steel.

(3) Fermentation System

Open Top Fermenter (Aerobic Fermentation): Open-top design to supply sufficient oxygen to sustain SCOBY activity. Tanks shall be fitted with interfaces for on-line pH and temperature monitoring.

Pressure-Rated Closed Fermenter (Secondary Anaerobic Fermentation): For products requiring carbonated mouthfeel; supports closed-chamber fermentation and CO₂ injection. Tanks must meet pressure-bearing specifications.

Recommended material for fermenters: SUS304 / SUS316L stainless steel with polished surface. Tanks shall feature sensor ports, side-mounted temperature probe connections and sampling ports.

(4) Filtration System

Plate-and-Frame Filter: Remove suspended solids and SCOBY pellicle fragments generated during fermentation.

Microporous Membrane Filtration System: Improve product clarity and extend shelf-life.

Note: Over-filtration may remove beneficial probiotic microorganisms. Balance shall be achieved between shelf-life requirements and functional properties of finished kombucha.

(5) Pasteurization / Sterilization System

Pasteurizer: Treat finished product to slow or halt residual fermentation and guarantee food safety.

(6) Filling & Packaging System

Automated filling line covering bottle rinsing, filling, capping, sleeve labeling, sticker labeling, inkjet coding, case packing and palletizing. Must comply with hygienic filling & sanitation requirements.

(7) Auxiliary Systems

CIP (Clean-in-Place) System: Automatic on-site cleaning for all process pipelines to ensure safe kombucha manufacturing.

Refrigeration System: Chilled water tanks and refrigeration units maintain stable fermentation temperature and cold storage for intermediate finished goods.

Process Control System: Data acquisition and processing unit including real-time data loggers, monitoring software and alarm modules, to monitor and regulate critical brewing parameters.

Critical Operational Considerations

Deep Integration of Process and Equipment

Avoid purchasing equipment first and then adapting production processes afterwards. Instead, design equipment specifications around your target production workflow. Before equipment selection, clearly define product positioning, production capacity planning and flavor profiles, then customize equipment parameters and configurations accordingly.

Food Safety & Quality Control

Fermentation acidity management: Continuous pH monitoring throughout production.

Alcohol content monitoring: For kombucha, alcohol level is generally kept below 0.5% v/v.

Factory Environment & Plant Layout

Maintain stable temperature and humidity for consistent fermentation conditions. Plan adequate floor space, ventilation capacity and water supply infrastructure.

Production Capacity & Scalability

Reserve capacity for future expansion during equipment selection to avoid production bottlenecks at later operational stages.

Select a Reliable Equipment Manufacturer — Why Tiantai?

For a high-efficiency kombucha production line, process know-how accounts for 30% of success, while equipment quality accounts for 70%. Partnering with a trustworthy supplier brings certainty to your whole project.

Kombucha Equipment Manufacturer-tiantai

Specialized Engineering Instead of Generic Assembly. Tiantai does not repurpose generic tanks for kombucha applications. We design and engineer each unit specifically for kombucha manufacturing characteristics, achieving deep matching between equipment hardware and customer-specific brewing workflows.

Robust Material Selection & Cost-Effective Value Proposition. We utilize food-grade SUS304 / SUS316L stainless steel. Tank inner surface finish reaches Ra ≤0.4 μm mirror polish. All process pipelines adopt automatic argon-arc welding to minimize microbial contamination risks from the source. Supported by large-volume manufacturing, we deliver competitive pricing without compromising quality, ensuring your investment targets core project requirements.
